Stuffed Bell Peppers

Now, on to today's post.  When I first started blogging I knew that I would be posting recipes from time to time but not as much as I have lately.  Which makes me feel the need to be real here.  Lately we have probably eaten just as many take out meals as I have cooked.  Trying new recipes is my attempt to shake things up and add some new dishes to our menu that I enjoyed cooking and the family enjoyed eating.  So, that being said I hope you guys don't mind me sharing.

This recipe for Stuffed Bell Peppers was my Mom's recipe and sadly the only one I have that is in her handwriting.  I came across it the other day in my recipe binder and realized that I had not made it in years.





Stuffed Bell Peppers

6 medium green peppers
1 lb ground beef
1/3 onion
1/2 tsp salt
pepper
1 16 oz can of diced tomatoes, I like to use Rotel
1/2 cup water
1/2 cup uncooked long grain rice
1 tsp Worcestershire sauce
8 oz shredded cheese, I usually use cheddar

Cut the bell peppers (you can cut the top off to stuff but I like to cut them vertically).  Remove the seeds and membrane.  Boil in salted water for about 5 minutes.  Drain and transfer to a casserole dish.

Brown the ground beef and onion.  Drain.  Return to pan and add 1/2 tsp salt, a dash of pepper, canned tomatoes, water, rice and Worcestershire sauce.  Simmer until rice is tender, about 15 minutes.  Remove from heat and stir in 1 cup of the cheese.  Stuff peppers.  Bake at 350 degrees for 20 to 25 minutes.  Once done top with the remaining cheese and place bake in the oven for a minute or two to melt.

They were a big hit the other night when I made them.
