McAlister's Chicken Tortilla Soup

We love McAlister's Chicken Tortilla Soup and lately it has been our go to for picking up dinner when I don't feel like cooking.  Sadly, they only have it two days a week so it is hit or miss when we decide to order.  We do like the others but the Chicken Tortilla is by far our favorite.

So, like any good blogger would do I googled it and found several copycat recipes.  The recipe I went with is below.  It turned out amazing!  Even the kids, who haven't had the original, loved it!


Ingredients:

3 garlic cloves, minced
1 onion, chopped
3 TBSP butter
2 TBSP all purpose flour
3 can chicken broth
4 cups half and half
1 can condensed cream of chicken soup
1 cup salsa
1 15 oz can creamed corn
1 lb cooked and shredded boneless chicken breast
2 tsp ground cumin
2 1/2 TBSP fajita seasoning mix


Tortilla chips (we used scoops)
8 ounces cheddar or monterrey jack cheese

In a large pot over medium heat saute the garlic and onion in butter for about 5 minutes.  Add flour and stir until well blended, about 1 minute.

Add chicken broth and half and half, bring to a boil and reduce the heat to low.  Add the soup, salsa, corn, chicken, cumin and fajita seasoning.  Stir and cook about 15 minutes.

Place 1/2 oz of shredded cheese in a bowl and ladle soup in.  Top with additional 1/2 oz of cheese.

You can top with crumbled chips if you choose but we scooped.  I served roast beef and turkey croissants on the side.

  32. I think that everything said was actually very reasonable.
    But, think on this, what if you added a little information?
    I ain't saying your information is not solid., however suppose you added something that makes people desire more? I mean "McAlister's Chicken
    Tortilla Soup" is kinda vanilla. You could peek at Yahoo's home page and see how they write news titles to get viewers interested. You might add a related video or a related pic or two to get people excited about everything've got to say. Just my opinion, it might bring your posts a little livelier.

  38. I LOVE McAlister's Chicken Tortilla Soup, so I made this last night and it is a very good soup but McAlister's Deli is much better. If you did a blind folded side by side test you can taste the difference. But if you have never had McAlister's then you wouldn't know the difference and this is a very good tasty soup.
